Q: Is it vacuum sealed?
A: You bet, and the butcher has state of the art sealing technology so when frozen, it lasts over a year and is as delicious as it was when it was fresh. I’ve been doing this for over ten years, and my “Make Freezer Space Filet Night” filets are still out of this world.
Q: How long does it last?
A: Wen properly frozen, at least one year.
Q: What cuts do I get?
A: Anything. Everything. Any cut imaginable. But remember, these come from real cows, so you can’t get all filet mignon. You’ll be able to choose how the tenderloin is cut, or not cut. We give you a cut sheet where you choose how each part of the cow is cut. And we will give you advice if you’re not sure.
Q: How and when do I pay?
A: We will be implementing a pay by credit card system to this site shortly. You need to pay at least one month before pickup, because you essentially order a portion of a cow that will be hung and butchered in a given cycle.
Q: How do I get my meat?
A: We will give you a date two weeks before pickup. We can give tentative dates before that, but it often changes depending on the farmer or butcher’s schedule.
